Invite over friends and family for a sizzlin' shindig-there are plenty of these kabobs to serve your crowd!

Protein and Accompaniments

  • 2.5 lbs beef sirloin steak, cut into 1'' cubes
  • 2.5 lbs boneless skinless chicken breast, cut into 1'' pieces
  • 2.5 lbs shrimp, peeled and deveined, or large scallops
  • 4 qt vegetables and/or fruit, cut into 1'' pieces
  • Salt and pepper, to taste

Directions

To prepare the protein, place the beef, chicken, and shrimp or scallops by type into their own large resealable plastic bag (you should have one bag of each type of protein).
To prepare the marinades, mix the ingredients for each type in their own small mixing bowl. Pour the marinade in the resealable plastic bag of the corresponding protein. Seal and stir around the meats and seafood until the marinade has covered all the pieces.
Place the bags on a baking sheet and refrigerate for at least 4 hours or up to 6 hours.
To assemble the kabobs, start by seasoning the cut vegetables and/or fruit with salt and pepper.
Place the meat or seafood on a skewer, alternating with the vegetables and/or fruit.
Grill the beef to desired doneness.
Grill the chicken and seafood until cooked through to 165°F.

Beef Marinade

  • 1/2 cup oil
  • 1/2 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 1 Tbsp ginger, minced
  • 1/2 Tbsp garlic, minced
  • 2 Tbsp honey
  • 1 Tbsp lime juice
  • 1/2 tsp black pepper
  • 1/2 cup scallions, chopped

Chicken Marinade

  • 1/2 cup oil
  • 1/2 cup plain Greek yogurt
  • 1/2 cup lemon juice
  • 1/2 Tbsp sugar
  • 1-1/2 tsp ground cumin
  • 1 Tbsp garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp cilantro, chopped
  • 1/2 cup onion, minced

Shrimp or Fish Marinade:

  • 1/2 cup orange juice
  • 1/2 cup oil
  • 1/2 Tbsp garlic, minced
  • 1 Tbsp ginger, minced
  • 1/4 cup lime juice
  • 1/4 cup basil, chopped
  • 1/4 cup rice wine vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper

Cook's Notes

For the vegetarians, use extra firm tofu, cut into 1'' pieces, and combine with the beef marinade.
