Sheet Pan Loaded Mac and Cheese

Ingredients:

  • 1 lb. cavatappi pasta
  • 2-1/2 cup whole milk
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 Tbsp butter
  • 1/3 cup grated parmesan cheese
  • 1 cup sour cream
  • 4 Tbsp all-purpose flour
  • 2 Tbsp Dijon mustard
  • 4 cups shredded sharp cheddar cheese, divided
  • 10 slices cooked bacon, chopped
  • 1/3 cup chopped chives, divided
  • 2-1/2 cup frozen tater tots, roughly chopped

Preparation:

Preheat the oven to 350℉. Spray a sheet pan with nonstick cooking spray. Set aside.

Cook cavatappi pasta according to package directions. Drain and set aside.

In a large sauce pot, combine milk, salt, pepper, butter, parmesan cheese, sour cream, flour, Dijon mustard, and 3 cups of cheddar cheese. Stir over medium heat for 5 minutes. Add bacon and half of the chives. Stir to combine. Add pasta and stir until it is coated with the sauce.

Pour onto the sheet pan and spread it into an even layer. Top it with the frozen tater tots and remaining 1 cup of cheddar cheese. Bake for 15–20 minutes until golden brown. Let cool for 5 minutes. Garnish with remaining chives and serve.
