Peppermint Patty-Stuffed Cookies

Serves: 16 (makes 16 cookies)

Ingredients:

  • 1 (15.5-oz) box chocolate cake mix
  • 4 oz cream cheese, room temperature
  • 1 egg
  • 4 Tbsp butter, melted
  • 16 (1"-wide) peppermint patties
  • 4 oz semi-sweet chocolate
  • 2 Tbsp crushed peppermint candy canes

Preparation:

Preheat oven to 350℉.

In the bowl of a stand mixer, add the cake mix, cream cheese, egg, and butter. With the paddle attachment, mix until ingredients are combined and the dough is smooth.

Divide the dough into 16 equal pieces. Flatten each piece into 2-1/2" rounds. Place a patty in the center and shape the dough around it. Place on a baking sheet lined with parchment paper. Repeat with the rest.

Bake in oven for 10 minutes. Let cool.

In the meantime, melt the chocolate over a double boiler.

When cookies have cooled, place the melted chocolate into a small pastry bag or a small resealable plastic bag with a small opening cut in the corner.

Pipe the chocolate over the cookies, making small lines over the surface of the cookie. Sprinkle each with a bit of the crushed peppermint candy canes.

Let chocolate set before serving

Cook's Notes

You can find crushed candy canes in most supermarkets or big-chain craft stores that have a cake-and-candy-decorating section. You can also crush starlight mints if you can't find candy canes.
