Oven-Baked Potato Chips

Ingredients

  • 1 baking or russet potato, very thinly sliced
  • Olive oil
  • 2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp fresh chives, very finely chopped
  • 1/2 tsp lemon zest, very finely chopped

Preparation

Pre-heat the oven to 375°F. Slice the potatoes as thin as possible on a slicer or mandolin. Brush or spray the potato slices with the olive oil, sprinkle with a little salt, and bake for 15–20 minutes (they will brown at different times — just remove the chips as they are sufficiently browned).

In the meantime, combine the remaining ingredients in a small bowl. When they come out of the oven and are still warm, brush again lightly with the olive oil and sprinkle the spice mixture over the chips. Store in a paper bag (if there are any left!).
