Heirloom Tomato Bruschetta

Ingredients

  • 3 cups heirloom tomatoes, assorted variety, small diced
  • 1/2 cup red onion, small diced
  • 2 garlic cloves, minced
  • 1/4 cup basil, fresh chopped
  • 3 Tbsp olive oil
  • Salt and pepper
  • 1 crusty baguette, cut into slices
  • 2 Tbsp balsamic reduction glaze

Preparation

Preheat the oven to 350°F.

Lay bread slices out on a sheet tray and brush with olive oil on both sides.

Toast bread for 3 minutes or until golden brown, then flip slices over and toast for another 2-3 minutes on opposite side.

While bread is toasting, combine all tomato ingredients into a bowl and toss with olive oil, garlic, onion, fresh basil, and salt and pepper.

Once bread is toasty, plate and spoon tomato mixture on top while warm.

Drizzle with balsamic reduction glaze and enjoy!

For a holiday spin, try adding 1/2 cup chopped figs to the mix!
