Eggroll in a Bowl

Serves: 3–4

Ingredients

  • 1 lb ground pork
  • 2 cloves garlic, sliced thin
  • 1 (12-oz) bag Asian slaw mix
  • 1 tsp Chinese five spice
  • 1/3 cup green onion, sliced thin
  • 1 Tbsp low-sodium soy sauce
  • 2 tsp chili garlic sauce
  • 1 tsp sesame oil

Preparation

Place slaw mix in a large mixing bowl and set aside.

Heat a large skillet over medium-high heat. Once skillet is hot, add the ground pork, begin to break it apart, and cook until no longer pink, then strain if needed.

Return to pan, then add garlic and sweat until just tender, about 30 to 45 seconds. Add five spice and toss to coat. Finish the dish by combining pork mixture to the slaw mix, followed by the remaining ingredients.

Toss around until everything is evenly distributed and slaw is coated. The whole mixture should be slightly warm and just a little crunchy.

Any ground meat or plant-based substitute can be used.
