Creamy Avocado Pasta

David’s Note: Avocado sauce? You heard right! Turn up the taste when you coat pasta in something fresh & unexpected.

Pasta

  • 1 lb linguini
  • 2 Tbsp olive oil

Preparation

To prepare the pasta, cook the linguini in boiling salted water until it's al dente. Drain the pasta in a colander, then toss it with the oil. Keep the cooked linguini at room temperature or cool in the refrigerator.
To prepare the sauce, place all ingredients into a Vitamix or other blender and purée until smooth, tamping down with a spatula as necessary to fully combine the ingredients.
To finish the pasta with the mix-ins, start by tossing the linguini with the sauce in a large mixing bowl until fully coated.
In a small mixing bowl, place the bacon, tomatoes, oil, salt, and pepper. Toss gently to coat evenly.
Make a well on top of the pasta and spoon the tomato mixture into the well. Sprinkle the feta, Parmesan, and cilantro overtop the entire dish. Serve individually in small bowls.

Sauce

  • 6 ripe avocados
  • 1/4 cup lemon juice
  • 2 cloves garlic
  • 1/2 cup plain Greek yogurt
  • 1/2 cup olive oil
  • 1/4 cup cilantro
  • 3 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp Parmesan, grated
  • 1-1/2 cups water

Mix-ins

  • 6 bacon slices, cooked, drained, and diced
  • 1 qt cherry tomatoes, halved
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Parmesan, grated
  • 1/4 cup fresh cilantro leaves

Cook's Notes

Tip: You'll know your noodles are cooked al dente when the center of each piece is just cooked through, but still feels firm when you bite into it.
