Cheeseburger Enchiladas

Cheeseburger Enchiladas

Ingredients

  • 7 strips bacon
  • 1 Tbsp vegetable oil
  • 1-1/2 lbs ground beef, 80/20
  • 1 medium onion (1 cup), small dice
  • 2 Tbsp taco seasoning
  • 2/3 cup dill relish
  • 1 Tbsp yellow mustard
  • 1/4 cup ketchup
  • 1-1/4 cup salsa con queso
  • 12 (8") flour tortillas

Preparation

Preheat oven to 350°F. Place bacon on a baking sheet and cook until crispy, turning the tray halfway, for about 18 minutes.

Heat oil in a nonstick skillet over medium heat and add the ground beef, onion and taco seasoning. Cook until the beef is no longer pink, then drain.

In a medium mixing bowl combine ground beef & onion mixture, relish, mustard, ketchup, salsa con queso, and cooked bacon.

In a small mixing bowl, combine all of the special burger sauce ingredients.

Spread half of the sauce over the bottom of a 13x9 baking dish. Divide ground beef mixture evenly among tortillas and roll up.

Arrange tortillas, seam side down, in baking dish and cover with aluminum foil. Bake for 15 minutes, then uncover and pour the remaining sauce over the top.

Bake for an additional 5 minutes uncovered.

Sprinkle with chopped lettuce and tomatoes right before serving.

Special Burger Sauce

  • 1/2 cup mayo
  • 1/2 tsp taco seasoning
  • 1/3 cup ketchup
  • 1/4 cup yellow mustard
  • 1 tsp dill pickle juice
  • 1/2 head romaine lettuce, chopped
  • 1 medium tomato, chopped
