Chili-Cheese Dog Casserole

Cheesy hot dogs can be enjoyed at the table, not just in the baseball bleachers! My one-dish casserole is a guaranteed home run.

Ingredients

  • 2-qt canned chili con carne (or your own recipe), divided
  • 10 medium-size corn tortillas
  • 10 all-beef hot dogs
  • 1-1/2 cups shredded cheddar cheese
  • 1 cup Cheese Whiz
  • 1 (4-oz) bag Fritos corn chips, crushed

Directions

Preheat the oven to 350°F.
Spread 1 qt of the chili on the bottom of a 9" x 13" baking dish. Set aside.
Lay out the tortillas and sprinkle the shredded cheese in a line down the center, evenly distributing the cheese between the 10 tortillas. One by one, place a hot dog over the cheese and roll up the tortilla as you would an enchilada.
Place the rolled tortillas on top of the chili in the baking dish, making 2 rows of 5 rolls. When all of the tortillas are in the dish, cover with the remaining chili, evenly dollop the Cheese Whiz across the chili, and sprinkle on the crushed Fritos.
Spray a piece of aluminum foil with nonstick cooking spray and use that to cover the baking dish. Place in the oven and bake for 40 minutes (you'll see some bubbling around the edges). Remove the foil and bake for another 10–15 minutes until heated through. Let cool for about 5 minutes before serving.

Cook's Notes

The beauty of my casserole: it can be made a day ahead & baked when you need it! You can also put a personal touch on the chili by adding onion, peppers, beans & a little more spice.
