Tater Tot Frittata

Ingredients

  • Vegetable oil cooking spray
  • 3 cups frozen tater tots
  • 1 medium red pepper, diced
  • 1/2 small red onion, diced
  • 1/2 cup canned black beans, rinsed
  • 1 cup shredded cheddar cheese
  • 10 whole eggs, beaten
  • Salt and pepper to taste
  • 1 cup sour cream
  • Juice of one lime
  • 1 cup shredded cheddar cheese 10 whole eggs, beaten Salt and pepper to taste 1 cup sour cream Juice of one lime 1 bunch of scallions, chopped

Preparation

Preheat oven to 350°F.

Spread the tater tots out on a baking sheet and bake in oven for 15 minutes. You can also do this in an air fryer if you would like some extra crunch. Remove from the oven and allow to cool for 5 minutes.

Spray a 10" sauté pan with cooking oil. Add tater tots, red pepper, red onions, black beans, and cheddar into a medium-sized bowl. Fold all ingredients together to make sure they are all combined.

Pour ingredients into 10" skillet. Then pour egg mixture on top of other ingredients. Make sure all ingredients are covered with the egg mixture.

Bake in oven for 40 minutes or until frittata is firm to the touch.

While the frittata is cooking, add the sour cream and lime juice to a small bowl and stir to combine.

Once the frittata is out of the oven, allow 5 minutes to cool, then drizzle with lime crema and scallions. Enjoy!

Cook's Notes

The black beans in this recipe add extra protein to the frittata, as well as a boost of fiber. If you are not a fan of beans, omit them and add more veggies or even another protein to the recipe, such as bacon or ham.
