Smoked Tomato Salsa

Ingredients

  • 3 tomatoes
  • 1 clove garlic
  • 1/4 large red onion
  • 1/2 jalapeno, seeded (optional)
  • 1/2 lime, juiced
  • Salt

Preparation

Cut the tomatoes in half horizontally and remove the seeds with your hands. Place 1 – 2 tsp. of fine wood chips on the bottom of the smoker. Place the drip tray on top of the chips and place the rack on top of the drip tray. Place the tomatoes, cut-side up, on the tray. Season with salt and pepper.

Place the smoker over medium high heat and wait until you see smoke. Once there is smoke, cover the smoker and smoke tomatoes for 8 minutes. Turn the heat off and allow the tomatoes to sit in the smoker, covered, for another 8 minutes.

Using a food processor, finely chop the garlic and cilantro. Add the red onion, jalapeno pepper, and smoked tomato. Pulse until desired consistency is achieved, or puree for a smooth salsa. Season to taste with lime juice and salt.

Serve with tortilla chips, or use as a topping for fish.
