Pumpkin White Chocolate Chip Cookies

Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • ½ cup canola oil
  • 1 large egg
  • 1 Tbsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp pumpkin spice
  • ½ tsp salt
  • 1 tsp baking soda
  • 1-½ cups white chocolate chips

Preparation

Preheat oven to 350°F.

Line baking sheet with parchment. Set aside. Combine pumpkin, sugar, canola oil, vanilla, and egg in a large mixing bowl. Mix until smooth.

In a separate bowl, stir flour, baking powder, cinnamon, pumpkin spice, and salt together. Add flour mixture to pumpkin mixture until combined. Stir in white chocolate chips.

Spoon cookies onto sheet 2 inches apart. Bake in a preheated 350°F oven for 11-12 minutes.
