Pumpkin Pecan Chocolate Cookies

Serves: 3 dozen cookies

Ingredients

  • 1/2 cup of chopped pecans
  • 1 Tbsp pumpkin pie spice
  • 1/4 Tbsp sugar
  • 1 Tbsp butter
  • 1 (17.5-oz) bag of chocolate chip cookie mix
  • 1 stick (1/2 cup) softened butter
  • 1 cup pumpkin puree
  • 1 Tbsp pumpkin pie spice
  • 1 egg
  • 1 cup of flour
  • 36 whole pecans for pumpkin stems

Preparation

Preheat the oven to 375°F.

In a small bowl, mix the chopped pecans, pumpkin pie spice and sugar.

Melt the 1 Tbsp of butter in a skillet over medium heat.

Add the pecans and cook for 2–3 minutes until fragrant, stirring frequently.

Remove from the heat and let cool.

In a large bowl, stir the cookie mix, butter, and egg together until combined.

Add the pumpkin puree, pumpkin pie spice, and flour.

Mix until combined.

Once the pecans are cooled, fold them in the cookie dough.

Scoop the cookies onto a cookie sheet and bake for 8–10 minutes.

Remove the cookies from the oven and lightly press the whole pecan in the top of the cookie to look like a pumpkin. Let cool and serve.

Cook's Notes

Use a small ice cream scoop to make the cookies the same size.
