In a hurry? The cook-time for this recipe is a whole six minutes! And, you can marinate the shrimp for as little as 15 minutes.
To prepare the marinade, combine the pineapple juice, olive oil, chipotle pepper, garlic, salt, ground pepper, and cilantro in a medium-size bowl. Add the shrimp, toss well to coat, and marinate for 15 minutes to 1 hour.
To prepare the sauce, whisk the chili sauce, pineapple juice, rice vinegar, soy sauce, brown sugar, and ginger together in a medium-size bowl. Set aside.
Preheat a barbecue or indoor grill to high.
Drain the marinade and add the shrimp to the grill. (If using a barbecue grill, use a mesh grill pan.) Cook the shrimp for 5-6 minutes, or until cooked through, tossing frequently. Serve immediately with the dipping sauce.
In order to keep the proper texture, be careful not to over marinate the shrimp.
