Dairy-Free Deviled Eggs

Ingredients

  • 12 organic eggs
  • 6 slices bacon, thick cut
  • 4 Tbsp brown sugar
  • 2 large avocados, sliced and scooped out of skin
  • 4 Tbsp Dijon mustard
  • 3 Tbsp lemon juice
  • 1 Tbsp chopped dill

Preparation

Preheat oven to 350°F.

Bring medium sauce pot of water to a boil. Have a bowl of cold water on hand. Once pot of water boils, add 12 eggs carefully with a large spoon.

Cook for 12 minutes. Remove eggs using a slotted spoon and immediately place in cold water.

While eggs are in cold water, lay bacon on nonstick sheet pan. Sprinkle evenly with brown sugar. Bake at 350 for 12–14 minutes. Remove from oven. Cool.

Gently peel eggs under running cold water. Cut in half and carefully remove yolks. Place yolks in mixing bowl. Add avocados, Dijon, lemon juice and dill. Mash with a fork until smooth. Spoon or pipe into eggs. Finely chop candied bacon. Garnish your eggs.
