Chicken Satay with Peanut Sauce

Prep Time: Prep time is 20 minutes. Marinating time is 30 minutes. Cook time is 6–8 minutes.

Serves: 4

Chicken Satay:

  • 1/2 small serrano pepper, seeded
  • 1 small garlic clove
  • 2 Tbsp brown sugar, packed
  • 2 tsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp fish sauce
  • 1 tsp rice vinegar
  • 4 large leaves fresh basil
  • 8 oz chicken breast tenderloins, cut in half lengthwise and pound into 1/4"-thick pieces
  • Soaked wooden skewers

Preparation

To make the satay, combine in chopper bowl the sugar, serrano pepper, and garlic and pulse. Add sugar, soy sauce, sesame oil, fish sauce, and vinegar and puree until smooth. Add basil and pulse until coarsely chopped. Pour marinade over chicken, tossing to coat and refrigerate for 30 minutes. Thread chicken onto skewers.

To make the peanut sauce, combine in chopper bowl the peanut butter, coconut milk, serrano pepper, sugar, soy sauce, vinegar, and fish sauce and puree until almost smooth. Add basil and pulse until coarsely chopped.

Arrange chicken skewers on broiler pan. Cover ends of skewers with foil. Broil 4" from heat until beginning to caramelize and no longer pink, 6–8 minutes, turning once. Arrange skewers on serving platter; sprinkle with peanuts finely chopped using chopper. Serve with sauce.

  • 1/4 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 1/2 small serrano pepper, seeded
  • 1-1/2 tsp brown sugar, packed
  • 1-1/2 tsp soy sauce
  • 1-1/2 tsp soy sauce
  • 2 tsp rice vinegar
  • 1 tsp fish sauce
  • 3 large leaves fresh basil
  • 1/4 cup peanuts, chopped
