Cheeseburger Kebabs with Avocado Crema

Preparation

Burger Balls

Preheat oven to 350°F.

Combine all ingredients in a mixing bowl and incorporate, using the paddle attachment. As an alternative, this can be mixed by hand. Using a cookie scoop or a tablespoon, make your burger balls. With your thumb, make an indentation in each ball and place a square of cheese.

Roll the ball to be sure the cheese is fully covered by the beef mixture. Place the burger balls on a nonstick baking sheet. Bake for 6–8 minutes. Remove from oven and allow to cool.

Kebab Veggies

Using a 10” wood skewer that has been soaked in water for a minimum of 30 minutes, build your kebabs. Put the cheeseburger balls and veggies in any order you’d like. Grill kebabs for 2 minutes on each side.

Avocado Crema

Place all ingredients except the oil in a good processor or blender. Slowly drizzle in the oil. Add ice. Serve as a dipping sauce for your cheeseburger kebabs

Burger Balls

  • 1 lb lean ground beef (80/20)
  • 1 egg
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 Tbsp ketchup
  • 1-1/2 Tbsp Dijon
  • 8 oz block of cheddar cheese, cut into 1/2" squares

Kebab Veggies

  • One pint cherry tomatoes
  • 2 red onions, cut into 1" pieces
  • 2 heads romaine, cut into 1" pieces
  • 6 dill pickles, cut into 1" pieces

Avocado Crema

  • 2 avocados, flesh only
  • 1 lime
  • 1/4 tsp garlic
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil
  • 1/2 cup ice
