Cheddar-Chive Buttermilk Biscuits

These versatile biscuits are great as a side for soup or to round out a meal of scrambled eggs. In fact, they're so delicious, you can serve them all on their own!

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp powdered ranch dressing mix
  • 1 cup extra-sharp cheddar cheese, grated
  • 2 Tbsp chives, chopped
  • 3 oz butter, placed in the freezer for 1 hour
  • 1-1/4 cups buttermilk

Directions

Preheat oven to 400°F. Line a baking sheet with parchment paper and set it aside.
Mix together the flour, baking powder, baking soda, salt, and ranch dressing mix in a large mixing bowl. Add the cheddar cheese and chives and stir together.
Using a box grater, grate the butter directly into the dry ingredients and gently toss to coat. Add the buttermilk and mix together until just combined.
Portion out the biscuit dough onto the prepared baking sheet using a 1/4-cup measuring cup. Bake for 15–20 minutes until golden brown.

Cook's Notes

Freezing the butter before grating it results in a more tender, flaky biscuit.
