BBQ Chicken Pizza

Ingredients

  • 1/4 of a small red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 2 cups cooked chicken or half a rotisserie chicken, picked and shredded
  • 3/4 cup barbecue sauce, divided
  • 9 oz pre-baked pizza crust
  • 3/4 cup smoked gouda, finely grated
  • 3/4 cup mozzarella, grated
  • 2 slices of bacon, cooked and chopped
  • 2 Tbsp cilantro, chopped

Preparation

Place a large sheet tray or pizza stone in your oven and preheat it to 450°F.

While the oven heats, add the sliced onion into the apple cider vinegar and set aside to soak. Toss the shredded chicken with 1/4 cup of the barbecue sauce and spread the remaining sauce in an even layer over the pizza crust.

Top with the chicken followed by the smoked gouda and the mozzarella. Drizzle over a little extra barbecue sauce and top with cooked bacon.

Place pizza on the preheated sheet tray or stone and bake for 5 minutes. Remove sliced onion from the vinegar and place on top of the pizza.

Bake for another 5 minutes or until the crust is golden and the cheese is melted.

Sprinkle it with cilantro, slice, serve, and enjoy.
