Apple, Cheddar & Bacon Pancakes

Ingredients

  • 1 (10-oz) pack of keto- or carb-friendly pancake and waffle mix
  • 1/2 cup no-sugar-added hickory smoked bacon, chopped fine (about 3 slices, reserve fat)
  • 1 cup grated granny smith apples
  • 1/2 cup grated white extra-sharp cheddar cheese
  • 1-1/4 cups low-sugar apple juice (or amount of liquid recommended on the package)
  • Unsalted butter
  • Low-sugar maple syrup

Preparation

Heat a non-stick skillet over medium-low heat. Mix the first five ingredients together until combined. Heat a tablespoon of the reserved bacon fat in the skillet. Once the fat is hot, place 1/3 cup of batter for each pancake in the skillet and cook on each side for about 3 to 4 minutes or until all the way through. Once the pancakes are finished, plate and garnish with the desired amount of butter and syrup.

You can also make these with regular store-bought pancake mix.
