Roasted Butternut and Corn Soup


1 butternut squash
2 Tbsp. brown sugar (optional)
3 ears corn
2 tsp. olive oil
1/2 onion, chopped into small dice
1 rib celery, chopped into small dice
2 small carrots, chopped into small dice
1 clove garlic, smashed
1 qt. water
Salt and freshly ground black pepper
1 – 2 Tbsp. fresh parsley, chopped


Cut the butternut squash in half and remove the seeds. You can reserve the seeds and toast them to use as a garnish if desired. Place the squash halves flesh-side up on the cast iron lasagna pan and sprinkle with brown sugar, if desired. Roast in a 400ºF oven for 1 hour, or until the flesh is soft and tender. Meanwhile, remove the kernels from two of the ears of corn. Roast the last ear of corn over a gas burner or under the broiler. Remove the toasted kernels from this last ear of corn and reserve as a garnish for the soup. Heat a cast iron casserole over medium heat. Add the olive oil and gently cook the onion, celery, and carrots until soft. Add the fresh corn kernels and garlic and stir well. Scrape the butternut flesh from the squash halves and add to the casserole. Add the water to the casserole and bring the mixture to a boil. Reduce the heat and simmer for 45 minutes or until all the vegetables are tender. Purée the soup using a food processor, blender, or immersion blender. For an extra smooth soup, pass the liquid through a food mill. Return the puréed soup to the casserole over low heat. If the soup is too thick, add more water. If it's too thin, simmer gently over medium-low heat until the desired consistency is achieved. Season to taste with salt and pepper, and garnish with the roasted corn kernels and fresh parsley. Serves 4 – 6.


Orange Braised Beef Short Ribs


2 Tbsp. olive oil
4 lbs. short ribs
Salt and freshly ground black pepper
1 onion, finely chopped
1 rib celery, finely chopped
2 cloves of garlic, minced
3 sprigs fresh thyme
1 bay leaf
1/2 cup white wine
1-1/2 cups orange juice
2 Tbsp. soy sauce


Heat a cast iron casserole over medium heat. Add the olive oil to the casserole and heat until it simmers. Season the short ribs well with salt and pepper and sear, browning well on all sides. When the ribs are nicely browned, remove them from the casserole and set aside. Pour off and discard the accumulated fat. Add the onion and celery to the casserole and cook for 4 – 5 minutes. Add the garlic, thyme, and bay leaf and continue to cook for another two minutes. Add the wine to the casserole and bring to a boil. Simmer until the wine has almost entirely disappeared. Add the orange juice and soy sauce and bring to a simmer. Return the browned short ribs to the casserole. Reduce the heat to very low and cover the casserole with a well-fitting lid. Let the ribs simmer for 4 – 5 hours over low heat on the stovetop, or in an oven at 300ºF. The ribs should be so tender that the meat falls off the bone. Remove the ribs from the pan and set aside, covered with foil. Increase the heat below the sauce and reduce the braising liquid until it has thickened slightly and is almost glaze-like. Return the ribs to the casserole and turn to coat in the sauce. Serve the ribs over egg noodles and spoon the sauce on top. The sauce can be strained, if desired, for a smooth finish. Serves 4 – 6.


Red Wine and Rosemary Braised Lamb Shanks


2 Tbsp. olive oil
6 lamb shanks (12 – 14 oz. each)
Salt and freshly ground black pepper
1 onion, finely diced
2 carrots, finely diced
2 ribs celery, finely diced
4 cloves garlic, minced
3 sprigs fresh rosemary
4 sprigs fresh thyme
2 cups red wine
28 oz. canned, diced tomatoes
1 Tbsp. tomato paste
2 cups beef stock
Fresh parsley, chopped


Heat your cast iron casserole over medium heat for 2 – 3 minutes and season the lamb shanks with salt and black pepper. Add the olive oil and brown the lamb shanks, in batches if necessary. Set the lamb aside. Add the onion, carrot, celery, garlic, rosemary, and thyme to the casserole and sauté until the vegetables are browned — about 20 minutes. Add the red wine and scrape the bottom of the casserole with a wooden spoon or spatula to release all the brown bits that may have accumulated on the bottom of the pan. Return the lamb shanks to the pot and add the tomatoes, tomato paste, and beef stock. Cover the casserole with the lid and braise on the stovetop over low heat or in a 300ºF oven for 2 hours, turning the shanks and basting occasionally. When the meat is tender, remove the shanks to a resting plate and tent with foil. Bring the braising liquid to a boil and simmer until the sauce thickens slightly. Spoon sauce over shanks and serve with rice, potatoes, or egg noodles. Garnish with fresh parsley. Serves 6.

It's a good deal Great set of pans. Three of the pans are perfect, they would get five stars. The one that lowers the rating is the grill pan. It's almost impossible to clean. I really enjoyed this set. I made leek soup in the three quart pan, have made roasts in the dutch oven and cakes in the long pan. It's really a wonderful set. QVC you've done it again. It's a set that will be handed down in my family. 09-13-10
Excellent value for quality cookware Recently I moved to a home with a gas range. I was worried about using my old non stick pans and decided to invest in this starter set. What a treat! LOVE IT LOVE IT LOVE IT Being a Southern woman I have cooked with cast iron for years. Leaned to cook with cast iron from my great grandmother, grandmother, and my mother. This set is wonderful. I can have my cake and eat it too meaning have my cast iron and have it in a beautiful color. No stickiing, chipping or staining. Cleans up beautifully. You get what you pay for! This is one of the few things I have not been happy with. I bought the technique hard anodized non-stick cookware and love it. However, this enamel covered cast iron stained badly, sticks, and has chipped. It is functional and I use it for things that contain liquid, but it is not the same quality as the brand name cookware. You do get what you pay for, I guess. I didn't use it right away and kept it too long to send back. My mistake. Customer service told me the guarantee does not cover staining or chipping. 06-14-10
Relaxed Cooking I purchased this set twice, once for myself (Black) & once for a gift (Red). As a matter of fact, I wish they would bring a set back in Yellow so I can give it as another gift. It would also be nice if they would come out with smaller & larger pots (saucepans). Maybe because I am an older person and have used these for most of my life, cooking in this set is like coming home. I didn't use as much for awhile because I couldn't find large enough pots to cook for a large group. (I went to Alluminin), As a matter of fact I have also purchased a enameled covered allunimin set of pots for a gift also. I digress - anyway, needless to say I love cooking in these pots, my food even seems to taste better. The clean up is a breeze. I don't fear anyone cooking in them like I did my alluminin. My set has even been used outdoors (which took a little extra cleaning but came right back to normal. Therefore I feel relaxed when I or someone else cooks in them, because they have been tried and proven to me to be the best. 06-08-10

Want more pieces!! Because I loved the Technique enameled skillet I bought about 6 months ago, I ordered this set of cookware. I like this cookware so much I keep checking the QVC website to see if there are other pieces to purchase! Cooks excellently and very easy to clean up. I gave it a 4 star rating because there are a few tiny chips in the enamel, but only the cleanup person would notice. 03-28-10
Enameled cast iron dutch over Sorry to say these enamal cooking pieces chipped. The cover chipped along the edges and the pot peeled on the bottom and we found pieces of enamel in our food. Ended up throwing the pot away. 03-21-10
I just love it!! I made home made granola and this is the best of the best product I ever bought. I purchased the Technique Enameled Cast Iron 11' to make my granola because I was having problems with any other pans... and this is so great..nothing stays or stick to it I am ordering the 5 piece cookware set now! 03-19-10
