Technique® Silicone Bakeware

Silicone bakeware has been used by professional bakers for decades, but now it is finding its way into home kitchens, and for very good reasons.

What is Silicone?
Silicone is a class of rubbers made from the natural chemical compound, silicon-dioxide. 

Why use Technique® Silicone Bakeware?
It Works!

  • Silicone bakeware distributes heat consistently throughout all surfaces of the bakeware and therefore promotes evenly baking and browning.
  • Silicone cools quickly.  This is important in baking to avoid carry-over cooking.  Within three minutes of being removed from the oven, the bakeware is cool enough to handle. 
  • Silicone bakeware has natural non-stick properties making it easier to unmold your baked goods.   In addition, Technique® silicone bakeware has a shiny gloss finish to enhance the silicone’s natural non-stick ability.  Still, we recommend following recipe instructions to grease and/or flour your bakeware when directed to do so.
  • The flexible properties of silicone bakeware also help with unmolding baked foods.  You can twist the bakeware to remove foods, or peel the bakeware away from finished food items.

  • Silicone bakeware is dishwasher safe, and is very easy to clean with warm soapy water.  Do not use metal scouring pads – you won’t need them.

 

Tips

  • When necessary, place the bakeware on baking trays for easier handling.
  • Follow recipe instructions for greasing or flouring your pans when directed to do so.
  • Do not use cooking sprays on your bakeware, as it may leave a stain.
  • Allow foods to cool completely in the bakeware before you attempt to unmold it.
  • Do not use your bakeware on direct heat (i.e. stovetop).
  • Do not use a sharp knife to cut food in the pan, as you may cut the silicone.
  • When freezing batters in the silicone bakeware, make sure the pan is level in the freezer.
  • There is no need to allow time between taking your silicone bakeware out of the freezer and placing it in the oven or microwave.
  • In the microwave, place the bakeware in the middle of the turntable for thorough heating.
Recipes
Chocolate Pecan Fudge

Ingredients:

7 oz. marshmallow cream
1-1/2 cups sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 tsp. salt
1 cup milk chocolate chips
2 cups semisweet chocolate chips
1 tsp. vanilla extract
1 cup pecans, toasted and chopped
 
Directions:

Combine marshmallow cream, sugar, evaporated milk, butter, and salt in saucepan and bring to a boil. Cook mixture, stirring, for 5 minutes. Remove pan from heat, and stir in the two different chocolates. Stir until chocolate is melted and well combined. Stir in vanilla extract and toasted pecans. Pour mixture into the flexible bakeware (two 8” cake pans) and refrigerate until mixture sets and is firm. When ready to serve, remove fudge from pan(s) and cut into pieces.

Puff Pastry Pinwheels

Ingredients:

1 package frozen puff pastry, thawed
8 oz. blue cheese, crumbled
8 oz. bacon, cooked and crumbled
1–2 eggs, lightly beaten

Directions:

Preheat oven to 400F. Roll puff pastry lightly on flexible baking mat, keeping its rectangular shape. Brush surface of pastry with lightly beaten egg. Sprinkle entire surface of puff pastry with crumbled blue cheese and crumbled bacon. Using the flexible mat to help you, roll pastry into a log. Place the entire log (mat included if desired) into the freezer for 10 to 15 minutes. Remove slightly frozen pastry log from freezer and place on cutting board. Slice log into 1/2-inch slices and place these cut side down on the flexible baking mat on a cookie sheet. Brush surfaces with remaining lightly beaten egg. Bake at 400F for 5 to 10 minutes, or until nicely browned.

Canadian Butter Tarts

Ingredients:

2 eggs
1-1/2 cups brown sugar
1/2 cup corn syrup
3 Tbsp. butter, melted
1 cup currants or raisins
1/2 cup chopped walnuts
2 tsp. vinegar
Pinch of salt
1/2 tsp. pure vanilla extract
One package of puff pastry

Directions:

Preheat oven to 350F. Beat eggs well with a stand mixer, hand mixer, or vigorously with a whisk. Add brown sugar, corn syrup, and melted butter, and beat again. Add currants or raisins, walnuts, vinegar, salt, and vanilla extract, and mix filling vigorously. Place circles of uncooked pastry into the flexible muffin pan. Fill the shells 2/3 full and bake until pastry is light brown, about 20 minutes. (For runnier tarts, cook for 15–17 minutes.) Let tarts cool in the pan and then unmold and serve.

Flourless Chocolate Hazelnut Cake

Ingredients:

Cake:
12 oz. semisweet chocolate, chopped
12 oz. butter
1-1/2 cups cocoa powder, sifted
12 eggs
1-1/2 cups sugar
1 Tbsp. vanilla extract
2 cups hazelnuts, finely ground

Chocolate Espresso Sauce:
1/2 cup heavy cream
1/2 lb. semisweet chocolate
1 Tbsp. instant coffee
1 Tbsp. water
1/4 cup butter
1 tsp. vanilla extract

Directions:

Preheat the oven to 325F. Melt semisweet chocolate and butter together over a double boiler or very carefully in the microwave. Stir until smooth. Combine and beat together cocoa powder, eggs, sugar, vanilla extract, and hazelnuts. Add melted chocolate to the egg mixture, and whisk to incorporate. Pour batter into the flexible bakeware shape of your choice. This batter will fill a 6-cup mold. If you are using two 8” cake pans, there will be a little extra batter with which you can make mini cakes or cupcakes. Bake at 325F for 30 to 40 minutes (13 to 15 minutes for cupcakes) or until a toothpick inserted into the center of the cake comes out clean. Cool completely in the cake pan and then invert onto a plate.

LOVE THIS SET! I use at least one piece in this set every week. I purchased mocha and it looks like chocolate. I spray each piece as I use it and have never had a problem. I use the bundt pan the most and the cake pops out and even bounces a little. Too bad the set is no longer available ... I DID purchase it at the QVC outlet in Lancaster for less than $15! 04-01-11

Disappointed I purchased this set along with some other kitchen essentials. I am so disappointed. When you see these on TV it shows you how quick and easy it is to bake things. The only thing in this set that I have used that I like are the cookie sheets. Everything else sticks. I've made brownies, they stick, cupcakes, stick. Everything sticks! I should have read the reviews online before I purchased this product, had I, I would have purchased something different. 06-09-10
Easy to clean I have not used the Bundt type cake pan or the muffin pans, but I have used the loaf pans for several casseroles which usually require a lot of "cleaning" time - like corn pudding or souffle, meat loaf, mac and cheese, etc. The food residue simply wipes out - no soaking required, no need to scrub. Baked barbecued pork chops and did not even line the pan with aluminum foil - no problem. I immediately ordered a 2nd set and am contemplating a 3rd set. I am going to get rid of lots of my heavy and hard to store glass bowls. Just be aware that the silicone pieces are not sturdy by themselves. You need a sturdy tray to set them on - such as the #K10255 Helper Tray or a sturdy silicone tray. I cook from scratch most evenings and this bakeware is saving a lot of wear and tear on my back from bending over the sink and scrubbing. Worth more than the cost (Which you can't find for this price per piece anywhere! 05-24-10
i purchesed these i purchesed these a few months ago, used them for the first time the 14th of may, i loved them. easy clean up. my son was so impressed with them he had me order him a set 05-17-10
Spray Required I have this set in red. It was given to me as a gift. I do like it but it's true what they say about sticking. If you use cooking spray your baking product will come out, but you definitely need to spray it up. I love the 2 lb loaf pan. It makes the best bread!! And it's extremely hard to find a 2 lb loaf pan. 05-17-10
Stick, stick, stick These are nice, but they do stick, especially the muffin tin. They made my cornbread a mess. I bought these for a wedding gift and now I am disappointed. 05-13-10

greaat cookware I have had this set for over a year in red. No problem with staining and great results, especially with baking. No sticking at all, even without sprays. The cookie sheets, when used alone, do change shape so I use them as a silicone liner on a traditional cookie sheet. I highly recommend them. 04-15-10
Amazing I really don't understand the bad reviews for this Bakeware. I have two sets and I love it. I have never had anything stain the bakeware. I have a Red set and a Brown set and I have baked just about everything you can think of with great success. Everything comes right out with no sticking. I have never used any spray and that maybe why some people are seeing stains on their bakeware. It says that it is not necessary to use sprays and so far that has proved to be true for me. I am going to give a set to my sister, for her Birthday, and I would not do that if I were not sold on this product. 04-11-10
4.75 Stars!!! Bought this as a TSV in 2007, and what a value indeed!!! I just love this set of silicone pans. Yes, they are flexible, but that is just one of the many benefits. I sit them on a cooling rack for stability to put them in the regular electric oven and have not had any shape or burning issues. It does take some effort to remove baked goods (same as it does with any bakeware), but the fact that you can push from the bottom certainly does make it much easier. I gave it 4.75 stars because, to me, the spatula is not that good as it is very stiff from handle to tip. 04-01-10
