Turkey and Stuffing Croquettes

Serves: Makes about 9 croquettes

Ingredients

  • 3 cups cooked turkey, shredded into pieces
  • 3 cups prepared stuffing
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp poultry seasoning
  • 1/2 tsp dried sage
  • 3/4 cup canned whole berry cranberry sauce
  • 1 cup store-bought crispy fried onions
  • 1/2 cup flour
  • 2 eggs, lightly beaten
  • 1/2 cup plain breadcrumbs
  • Vegetable Oil, for pan frying
  • Turkey Gravy, for serving

Preparation

In a large bowl, add the turkey, prepared stuffing, salt, pepper, thyme, sage, and cranberry sauce.

Gently mix until combined.

Divide the mixture using a half cup measuring cup, making about 8–9 croquettes.

Form into the shape of a burger, about one inch high and 2–3 inches wide. Set aside.

In a small food processor or chopper, add the crispy fried onions and breadcrumbs. Pulse until fine.

Add the flour, beaten eggs, and breadcrumb mixture to three separate shallow dishes for breading.

Dredge each croquette in the flour (shaking off excess), then the egg, then breadcrumb mixture. Repeat until all croquettes are breaded.

Heat about ¾ to 1 inch of oil in a large frying pan over medium heat. Once the oil starts to glisten, fry the croquettes in batches on both sides until golden brown, about 2 minutes per side. Drain on a paper towel

Serve with warmed turkey gravy.

Cook's Notes

This recipe would work just as well with leftover or rotisserie chicken.
