Smoked Turkey Bánh Mì

Slaw Mix

  • 3-1/2 cups coleslaw mix
  • 3 whole scallions (sliced thin)
  • 1/4 cup cilantro (rough chopped)
  • 1-1/4 tsp grated ginger
  • 1-1/4 tsp grated ginger
  • 1/2 tsp celery seeds
  • 1/2 cup Japanese mayonnaise
  • 2-1/2 Tbsp distilled vinegar
  • 1-1/2 tsp granulated sugar
  • 1/2 tsp fish sauce

Preparation

Take the first 6 ingredients and toss them together in a medium-sized bowl.

Whisk the remaining ingredients for the slaw in a separate smaller bowl, then add together and mix well; allow to marinate together, refrigerated, for at least an hour.

Mash avocadoes, salt, and lime juice with a fork until it is a little smooth and spreadable, having some small chunks in there is a good thing.

To build the sandwiches, spread the crushed avocado evenly on each half of the rolls, place 6 leaves of basil on the bottom of each roll, then a 1/4 lb of turkey in each sandwich, followed by 6 or more slices of jalapeno across the top of the turkey. Then, finish by adding 3/4

Crushed Avocado

  • 2 ripe avocadoes
  • 1/2 tsp kosher salt
  • Juice of one lime

Look for Thai basil for a more authentic flavor.
