Serves: 6–8
Spray a 6-quart slow cooker with nonstick cooking spray.
Then, add all the ingredients up to the scallions.
Stir until combined. Place a clean dish towel over the top of the slow cooker, then place the lid on top of towel to collect moisture.
Cook on low for 4–5 hours, or high for 2–3 hours.
Garnish with scallions.
If you don’t have ham, you could substitute 8 oz of cooked, chopped bacon or diced sausage.
