Slow Cooker Western Cheesy Hashbrowns

Serves: 6–8

Ingredients

  • 1 (8 oz) boneless ham steak, small diced
  • 1 cup small diced green bell pepper
  • 1 cup small diced yellow onion
  • 1 (32 oz) bag of frozen homestyle diced potatoes
  • 1-1/2 cup shredded sharp cheddar cheese
  • 1 can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/3 cup chopped scallions (optional)

Preparation

Spray a 6-quart slow cooker with nonstick cooking spray.

Then, add all the ingredients up to the scallions.

Stir until combined. Place a clean dish towel over the top of the slow cooker, then place the lid on top of towel to collect moisture.

Cook on low for 4–5 hours, or high for 2–3 hours.

Garnish with scallions.

Cook's Notes

If you don’t have ham, you could substitute 8 oz of cooked, chopped bacon or diced sausage.
