Savory Breakfast Bowl

Ingredients

  • 1-1/4 cups chicken stock
  • 1/2 cup quick-cooking oats
  • 1/2 cup chopped cooked chicken sausage, about 4 small links
  • 1 cup baby spinach
  • 1/2 cup shredded sharp cheddar cheese
  • 2 Tbsp chopped scallions
  • Salt and pepper to taste
  • 2 eggs

Preparation

Add chicken stock to a medium saucepot and bring to a boil. Stir in the oats, lower the heat to medium, and cook for 2 to 3 minutes. Turn off the heat.

Add the cooked chicken sausage, spinach, cheese, scallions, and salt and pepper to taste. Let sit for 3 to 5 minutes.

Meanwhile, prepare the eggs to your liking. Sunny side up or poached is recommended. Season to taste.

When ready to serve, divide the prepared oatmeal between two shallow bowls. Top each with the cooked egg and garnish as desired.

Optional Garnishes

  • Fresh salsa or pico de gallo
  • Pickled jalapeños
  • Fresh cilantro leaves

 

Cook's Notes

To make this low carb, omit the chicken stock and substitute the oatmeal for prepared cauliflower rice.
