Root Beer Barbecue Sauce

Ingredients:

  • 1 Tbsp vegetable oil Half of a yellow onion, diced
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cloves of garlic, minced
  • 1 Tbsp tomato paste
  • 1 Tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1-1/2 cups ketchup
  • 3 cups root beer
  • 1/4 cup brown sugar
  • 1/8 cup Worcestershire sauce
  • 1/8 cup soy sauce
  • 1/2 cup apple cider vinegar

Preparation

Heat the vegetable oil in a medium saucepan over medium heat.

Add the onions and garlic, and season with salt and pepper. Cook until onions are very soft and translucent.

Add the tomato paste and spices to the pan. Cook for about one minute, stirring occasionally, until the tomato paste darkens and starts to stick to the bottom of the pan.

Add ketchup to deglaze and cook for about one minute, stirring, until ketchup darkens in color.

Add the root beer along with the brown sugar, Worcestershire sauce, and soy sauce. Stir to combine and bring the sauce to a boil.

Turn heat down to medium low and cook for about 10 minutes or until the sauce is reduced by about half. Turn off the heat and stir in apple cider vinegar.

Let the sauce cool completely and puree in a blender until smooth.

Cooking down your tomato paste gives your sauce a deeper flavor and color.
