Pimento Cheese BLT

Ingredients:

  • 4 slices artisan bread (sourdough or ciabatta)
  • 1 cup pimento cheese spread
  • 1 head romaine lettuce
  • 1 heirloom tomato
  • Salt & pepper
  • 8 pieces cooked, thick-cut bacon (Applewood smoked)

Preparation

Pre-heat oven to 350°F.

Toast the slices of bread in a toaster. Spread 1/4 cup of pimento cheese spread on each slice of bread.

Place toast with cheese spread on a small sheet tray and toast in the oven for 2–3 minutes to melt the spread.

Lay the 4 slices of bread on a cutting board and add 2 leaves of romaine on two pieces of toasted cheesy bread.

Add 2 slices of tomato to each sandwich.

Season the tomatoes with salt & pepper.

Place 4 pieces of cooked bacon on top of each sandwich.

Place the other piece of toast on top of the bacon to complete the sandwich.

Place two club frill picks in the sandwich and cut diagonally thru the sandwich.

Serve with a pickle and your favorite chips.

Cook's Notes

If you do not have pimento cheese spread, you can use your favorite cheese spread, such as garden vegetable cream cheese or a spinach & artichoke.
