Morning Glory Breakfast Cookies

Ingredients

  • 1-1/2 cups rolled oats
  • 2-1/4 cups basic muffin mix
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup applesauce
  • 1 Tbsp vanilla
  • 1-1/4 cups zucchini, shredded with box grater
  • 1/2 cup carrots, shredded with box grater
  • 3/4 cup dried cranberries
  • 2/3 cup chopped walnuts

Preparation

Preheat oven to 325°F.

Line a large baking sheet with parchment paper. In a bowl, mix together the oats, muffin mix, baking soda, cinnamon, and salt.

In another bowl, whisk eggs, maple syrup, applesauce, and vanilla. Add wet ingredients to the dry ones and stir until combined. Fold in zucchini, carrots, cranberries, and walnuts.

Using a 3-oz cookie scoop, place the cookie batter 2" apart. Bake for 12–14 minutes until golden brown.

Cook's Notes

If you'd like a bit more sweetness & less tartness, swap out the dried cranberries for dried cherries or apricots.
