Meaty Tortellini Soup

Meaty Tortellini Soup

Prep Time: 30 minutes; cook time: 8–9 hours.

Serves: 6

Ingredients:

  • 1 lb beef stew meat
  • 1 large onion
  • 2 celery stalks
  • 1 cup baby carrots
  • 2 Tbsp garlic, minced
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 14.5-oz can diced tomatoes, not drained
  • 24 oz beef broth
  • 6 oz dry red wine (optional)
  • 1-1/2 tsp dried basil
  • 2 cups frozen cheese-filled tortellini
  • 1 cup frozen green beans

Preparation:

Peel and dice onion. Chop celery into 1/4" pieces.

Place onion and celery into your Temp-tations® slow cooker along with meat, carrots, garlic, sugar, salt, pepper, tomatoes, broth, and wine. Cover and cook on low for 8 hours or until meat is tender.

Stir in basil, frozen tortellini, and green beans. Cook for 30 minutes more or until beans are tender. Serve with your favorite rustic bread.
