Irish Corned Beef Nachos

Ingredients

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1 (11.2-oz) bottle Irish stout beer
  • 2 cups Irish cheddar cheese, grated
  • 1 (10-oz) container pimento cheese spread
  • 1/2 tsp horseradish mustard
  • 1 tsp white balsamic vinegar
  • 1 (20-oz) bag frozen waffle fries, prepared per instructions
  • 1/4 lb deli corned beef, sliced into thin strips
  • 1 lb cooked bacon, chopped
  • 1 cup scallions, sliced

Directions

In a 3-qt saucepan, melt butter. Add flour, whisk together & cook for a minute. Add beer. Stir until mixture is smooth & thickened, about 1‒2 minutes. Stir in cheddar, cheese spread, mustard & balsamic vinegar.

Lay waffle fries on a platter & pour the warm sauce over them. Layer with corned beef strips & chopped bacon. Top with sliced scallions.
