Low-Carb Bacon Cheeseburger Casserole

Ingredients

  • 1 (10-oz) bag frozen riced cauliflower
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 eggs, lightly beaten
  • 1-1/2 Tbsp powdered ranch dressing
  • 1 lb ground beef, cooked, drained and cooled
  • 8 oz cream cheese, softened
  • 1 tsp granulated garlic
  • 1-1/2 Tbsp dried minced onion
  • 1 Tbsp Worcestershire
  • 2 Tbsp yellow mustard
  • 1/4 cup low-sugar ketchup
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 8 oz low-sugar bacon, cooked and chopped

Preparation

Preheat the oven to 350°F.

Spray a 2 to 3qt baking dish with nonstick cooking spray. Set aside.

Microwave the cauliflower rice according to the package. Carefully remove, open the package, and lay the riced cauliflower out on a sheet pan lined with a clean dish cloth or a few layers of paper towels. Let cool slightly, then press down on the riced cauliflower to remove as much liquid as possible.

When the riced cauliflower is dried out, add it to a medium-sized mixing bowl. Then, add the shredded mozzarella, parmesan, beaten eggs, and ranch dressing powder. Stir to combine.

Evenly spread the cauliflower mixture into the prepared baking dish. Bake for 15 to 20 minutes until set and golden brown. Set aside to slightly cool.

In a large mixing bowl, add the cooked ground beef, softened cream cheese, granulated garlic, minced onion, Worcestershire, mustard, ketchup, salt, pepper, and 1 cup of cheddar cheese. Mix thoroughly until all ingredients are combined.

Spread the beef mixture over the baked cauliflower crust. Top with the remaining cheddar cheese and chopped bacon. Cover with aluminum foil and bake for 20 to 30 minutes until bubbling.

Let sit 5 to 10 minutes and serve with the optional garnishes.

Optional Garnishes

  • 1 cup shredded lettuce
  • 1/2 cup diced cherry tomatoes
  • 1/3 cup chopped dill pickles

Feel free to substitute the beef for ground turkey or turkey bacon.
