Loaded Hummus Sandwiches

This flavorful sandwich is filled with Mediterranean-inspired flavors. Enjoy it at any time of day!

Serves: 4–8

Ingredients

  • 4 flour spinach wraps
  • 1-1/3 cups hummus
  • 1/4 cup thinly sliced red onion
  • 1 4"–5" piece seedless cucumber, sliced lengthwise and cut into long matchstick shapes
  • 16 pieces of julienned red pepper
  • 1 cup grated carrot
  • 8 cherry tomatoes, quartered
  • 1/2 cup crumbled feta
  • 3 cups baby spinach
  • 1 Tbsp Greek dressing

Preparation

Lay out the 4 spinach wraps on a work surface.

Put 1/3 cup of hummus in the center of each wrap and spread it over the wrap, leaving a 1" border.

Divide the red onion between the 4 wraps, spreading it on the hummus.

Divide the cucumber between the wraps, placing them lengthwise in the center of the hummus.

Place 4 pieces of red pepper lengthwise on top of the cucumber.

Divide the carrot, cherry tomatoes, and feta between the wraps.

In a bowl, toss the spinach with the Greek dressing and divide it between the wraps. Fold the right and left edges over and roll from the bottom to form the wrap.
