I wanted to take an old favorite of mine and add a summery twist. I "relish" the opportunity to share it with you all!
Prep Time: 20 minutes
Serves: 4–6
Preheat a grill to medium-high heat.
Brush both sides of the onion rings with the olive oil, then season with 1 tsp of the salt and the black pepper.
Place the onion rings on the preheated grill and cook for about 2–3 minutes per side, until grill marks form. Remove the onions from the grill and allow them to cool.
While the onions are cooling, combine the three mustards, remaining 1/4 tsp salt, honey, and dill in a medium-size bowl. Set aside.
Add the cooled onions to the bowl of a food processor and pulse until they're rough chopped, scraping down the sides as necessary. Add the chopped onions to the mustard mixture, mix to combine, and serve.
Make this ahead of time for your next BBQ and keep refrigerated until ready to use. Serve with hot dogs, burgers, chicken, corn on the cob…the possibilities are endless!
