Grilled Avocado Guacamole Recipe

Impress your guests at summertime gatherings with this flavorful version of a perennial fave.

Prep Time: 20 minutes

Serves: 3-4

Ingredients:

  • 3 ripe avocados, halved and pitted
  • 1 medium-size jalapeño pepper, halved and with the seeds removed
  • 1 Tbsp olive oil
  • 2 Tbsp chopped cilantro
  • 1 Tbsp lime juice
  • 1/2 tsp minced garlic
  • 1 plum tomato, halved, seeded, and small-diced (optional)
  • 1 to 1-1/2 tsp salt, to taste
  • 1/4 tsp black pepper
  • Tortilla chips, for serving

Preparation:

Preheat the grill to medium-high heat.

Brush the olive oil on the avocados and jalapeño. Place the avocado, flesh side down, on the grill. Grill for 1–2 minutes, until nice grill marks form. Set aside to cool. Next, grill the jalapeño for 2–3 minutes on each side. Set aside to cool with the avocado.

Using a spoon, scoop out the flesh of the avocado and add to a medium-size mixing bowl. Finely dice the grilled jalapeño and add to the bowl. Gently mash the avocado and jalapeño with a fork to combine. Then, add the cilantro, lime juice, garlic, tomato (if desired), salt, and pepper. Stir together until all the ingredients are incorporated. Serve with the tortilla chips.

Cook's Notes

If you like things a little extra spicy, leave some of the seeds in the jalapeño.
