Green Eggs & Ham Bagel Sammy

Ingredients

  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup baby spinach (chopped)
  • 3 Tbsp. basil pesto (store-bought or homemade)
  • 1/4 tsp Kosher salt
  • Pinch of ground black pepper
  • 4 bagels
  • 12 slices Black Forest ham
  • 4 slices white American cheese

Preparation

Place the first six ingredients in a blender and blend on medium-low speed until spinach is pureed.

Using pan spray, coat four 1-cup deli containers or a low-profile, microwave-safe container measuring 3.5". Divide egg mixture up evenly between the containers (approximately 4 ounces in each).

Lightly toast bagels. While the bagels are toasting, place one container in a microwave and cook for 25 seconds on high. You will notice some of the egg has set; stir the eggs so they cook evenly, and cook for another 30 seconds. Repeat.

Layer cheese, eggs, and ham on the bagel and enjoy!

Cook's Notes

For a healthier option, replace the cheese with a few slices of avocado.
