Garlic-Lime Grilled Wings

David Venable

A marinade that includes garlic, lime zest, cayenne and maple syrup puts a flavorful twist on a fan-favorite finger food.

Wings

  • 1-1/2 Tbs chili powder
  • 2 tsp garlic, chopped
  • 2-1/2 tsp salt
  • 3 limes, zested
  • 1/4 tsp cayenne
  • 1/4 cup maple syrup
  • 2 Tbs olive oil
  • 3 lbs chicken wings

Directions

To prepare the wings, combine the chili powder, garlic, salt, lime zest, cayenne, maple syrup, and olive oil in a large mixing bowl.
Pat the chicken wings dry with a paper towel and toss them in the prepared mixture. Place in the refrigerator and allow to marinate, at least 30 minutes and up to 2 hours.
While the wings are marinating, prepare the dipping sauce.
To prepare the dipping sauce, combine the ranch dressing, cilantro, lime juice, and garlic in a small mixing bowl. Refrigerate the dipping sauce until the wings are ready to serve.
Preheat the grill.
Grill the wings over medium heat with the grill lid closed. Check them every five minutes, turning as needed to prevent excess charring. Do this 3–4 times, allowing a total cook time of approximately 20 minutes.

Dipping Sauce

  • 1/2 cup ranch dressing
  • 1 Tbs cilantro, chopped
  • Juice from 1/2 a lime
  • 1 tsp garlic, chopped

Cook's Notes

Rather than turning wings one by one, use a grill basket—when ready, you just give the basket a shake and flip it over!
