Game-Day Hoagie Cups

Serves: 12 hoagie cups

Ingredients

  • 1/2 cup mayonnaise
  • 3 tsp red wine vinegar
  • 1/4 tsp dried oregano
  • 1/4 tsp black pepper
  • Salt to taste
  • 12 large slices Genoa salami
  • 3 slices deli ham, chopped (about 1/2 cup)
  • 3 slices provolone cheese, chopped (about 1/2 cup)
  • 1 cup shredded lettuce
  • 1/2 cup seeded small diced tomato
  • 1/2 cup seeded small diced tomato

Preparation

Preheat the oven to 375°F.

In a small bowl, add the mayonnaise, red wine vinegar, oregano, salt, and pepper. Stir to combine. Set aside.

Using a muffin tin, press the salami slices into each of the muffin cups.

Bake for 4 to 6 minutes, or until the salami just starts to set and hold shape. Remove from the oven and set aside to cool.

Once cool, fill each salami cup with ham and provolone cheese. Next, drizzle or spoon a small amount of the prepared dressing onto each cup. Then, top with lettuce, tomato, and red onion. Serve and enjoy!

Cook's Notes

Don't like ham? Feel free to substitute it for prosciutto, turkey, or your favorite deli meat!
