Easy, Elegant Lobster Bisque

This elegant and decadent bisque is easy to make. Yet, it will impress your guests and leave them feeling pampered.

Ingredients

  • 2 Tbsp oil
  • 4 Tbsp shallots, minced
  • 6 cloves garlic, minced
  • 1 cup leeks, minced
  • 1/2 cup celery, minced
  • 1/2 cup white wine
  • 4 tsp Worcestershire sauce
  • 4 tsp Tabasco sauce
  • 2 tsp fresh thyme, chopped
  • 2/3 cup sherry
  • 3 cups water
  • 3 tsp lobster bouillon (or chicken stock, if lobster bouillon isn't available)
  • 1/2 cup tomato paste
  • 2 bay leaves
  • 4 cups heavy cream
  • 2 cups lobster meat, cooked and chopped
  • 4 Tbsp unsalted butter

Directions

In a large stockpot, heat the oil over medium-high heat and add the shallots, garlic, leeks, and celery. Sauté until the leeks begin to soften.
Add the white wine, Worcestershire sauce, Tabasco sauce, and thyme. Simmer on low for 3 minutes, and then add the sherry, water, and lobster bouillon. Bring to a simmer and whisk until the bouillon is dissolved. Add the tomato paste and bay leaves and simmer on low for 8-10 minutes.
Add the heavy cream and lobster meat. Bring to a simmer and remove from the heat. Whisk in the butter and stir until melted.

Cook's Notes

Lobster Gram lobster is perfect for this recipe. (Just cook according to the package directions.) But, if you're feeling adventurous, you might try steaming your own fresh lobster. To do so, place the lobster in a steamer basket over boiling water and cover. A 1 lb lobster cooks in about 5 minutes; a 1-1/2 to 2 lb lobster cooks in 8-10 minutes; and a 2 lb lobster cooks in about 12 minutes.
