Serves: 12–14
Preheat oven to 350.
Coat an 8" x 8" baking dish with non-stick cooking spray.
In the bowl of a stand mixer fitted with the paddle attachment, combine cream cheese, mayo, sour cream, Worcestershire, chipotle, and the lemon juice and zest. Mix on medium speed until the ingredients are incorporated.
With the mixer on low speed, add crab, cheddar cheese and corn kernels. Mix just until combined.
Using a rubber spatula, put the mixture into your baking dish.
Bake for 25 minutes.
Remove from the oven, cool slightly and garnish with fresh chopped chives.
Serve with corn chips.
This dip may be prepared a day ahead of time and baked right before you’re ready to dip in!
