Coconut Snowballs

Serves: 6–8 people

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 2 Tbsp coconut flour
  • 1/2 cup unsalted butter
  • 1/3 cup sugar
  • 1/2 cup sweetened coconut flakes
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 cups powdered sugar

Preparation

Preheat oven to 325°F.

Sift together the flour and coconut flour, then set aside. In a stand mixer or with a hand mixer, cream the butter and sugar until blended.

Add sweetened coconut, salt, and vanilla, and blend well. Slowly add in the flour mixture until incorporated.

Form cookies into 1" balls and bake for 20 to 25 minutes until golden.

Let the cookies cool for about 10 minutes, then gently roll them in the powdered sugar. You will repeat this about 4 to 5 times depending on the desired snowball effect.
