Chocolate Peanut Butter Cup Dip

David Venable

Give peanut butter cups their day on the dessert tray by mixing them with whole milk ricotta, whipped cream cheese, and confectioner's sugar for this delicious dip.

Ingredients

  • 1/2 cup whole milk ricotta
  • 1 (8-oz) container whipped cream cheese
  • 1/2 cup creamy peanut butter
  • 1/4 cup cocoa powder
  • 1-1/2 cups confectioner's sugar
  • 1/4 cup heavy cream
  • Pinch of salt
  • 1-1/4 cups peanut butter cups, chopped and divided
  • Graham crackers, pretzels, and apple slices, for serving

Directions

Whip the ricotta cheese in a stand mixer or with a hand mixer in a large mixing bowl for 30 seconds, until smooth and creamy. Add the cream cheese, peanut butter, and cocoa powder and mix until combined.
Slowly add the confectioner's sugar to the ricotta cheese mixture, then the heavy cream and salt. Mix until combined. Gently stir in 1 cup of the peanut butter cups.
Place the dip in a serving bowl, cover, and refrigerate for 1 hour. Top with the remaining 1/4 cup of peanut butter cups and serve with the graham crackers, pretzels, and apple slices.

Cook's Notes

You can substitute an 8-oz block of cream cheese for the whipped cream cheese. Let it soften to room temperature, then whip it with the ricotta cheese in the initial step.
