Chilaquiles

Serves: 3–4

Ingredients

  • 8 oz red enchilada sauce
  • 1/2 cup chicken stock
  • 1-1/2 cup cooked shredded chicken
  • 4 heaping cups of tortilla chips, thicker style if possible
  • 1/2 cup Cotija cheese, or feta

Preparation

In a large pot, heat the enchilada sauce, chicken stock and chicken to a simmer for 3 minutes, or until chicken is heated through.

Add the tortilla chips to the pot and gently stir to coat the chips in the sauce. Once coated, transfer the chips to a serving platter.

Sprinkle the cheese over the coated chips.

Serve hot with all the toppings.

  • Cilantro leaves
  • Sour cream
