Smart Swap Chicken Salad Flatbread Sandwiches Recipe

Ingredients

  • 1 Tbsp olive oil
  • Salt and pepper, to taste
  • 6 (5-oz) boneless chicken breasts
  • 1/2 cup sugar-free Caesar dressing
  • 1/4 cup feta cheese, crumbled
  • 1 (2.25-oz) can sliced black olives, drained
  • 1/4 cup red onion, finely diced
  • 1/4 cup red pepper, finely diced
  • 8 oz hummus
  • 8 leaves of romaine lettuce, shredded
  • 4 (2-oz) low-carb flatbreads
  • 4 lettuce cups (optional)

Directions

Preheat your oven to 400°F with the sheet pan inside to warm.

Pour olive oil onto chicken and season with salt and pepper. Cook for 10–15 minutes or until the internal temperature reaches 165°F, flipping halfway through. Remove from the oven and let cool. Lower the oven temperature to 250°F.

Cut chicken into cubes.

In a medium-sized bowl, combine Caesar dressing, feta, olives, onion, peppers, and chicken. Fold together until all ingredients are coated with dressing. Set aside.

To heat the flatbread, place on a sheet pan in the oven for 2–4 minutes.

Remove flatbreads from the oven and transfer to a clean surface. To assemble, spread 4 Tbsps of hummus on each flatbread. Top with romaine and chicken salad mixture. Fold in half and serve.
