Chestnut Cookies with Chocolate Chips

Serves: 1 dozen cookies

Ingredients

  • 8 Tbsp unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1-1/2 tsp vanilla extract
  • 1 tsp salt
  • 1 large egg, room temperature
  • 1 cup chestnut flour
  • 3/4 tsp baking soda
  • 1 cup mega chip chocolate chips
  • 1/4 cup pecans, finely chopped

Preparation

Preheat the oven to 350°F. Line one (or more) baking sheets with parchment paper. Set aside.

In a medium-sized mixing bowl, use an electric mixer to blend the butter with the sugars, vanilla extract, salt, and cinnamon. Blend to completely incorporate the sugar and butter.

Next, add the egg and mix on low speed for 1 minute. The batter should be smooth and light. Measure 1 cup of chestnut flour and sift into the batter with the baking soda. Mix just until the flour is fully incorporated. Then fold in the chocolate chips.

Chill the dough in the refrigerator for 40 minutes.

Once chilled, use a small cookie scoop to shape the cookies. Place each cookie 2 inches apart on the parchment-lined baking sheet.

Bake until golden along the edges, about 10 minutes.

Let them sit for about a minute on the baking sheet and then carefully use a thin spatula to transfer to a cooling rack.
