Chai Tea-Glazed Turkey

This spice rub and glaze would also work beautifully on chicken or ham.

Serves: 12-14

Ingredients:

  • 8 bags of loose chai tea
  • 4 tsp pumpkin spice
  • 3-½ tsp salt
  • 2 tsp black pepper
  • 4 Tbsp olive oil
  • 1 turkey (12-14 lbs)
  • 1 carton (32 oz) chai tea
  • latte concentrate
  • ⅔ cup honey
  • 3 Tbsp cornstarch
  • 1-½ cup cold water
  • 4 tsp salt
  • 2-½ tsp pepper
  • 8 Tbsp butter

Directions:

Preheat oven to 425°F. In a bowl, whisk the tea, pumpkin spice, salt, pepper, and oil. Remove giblets from the turkey. Rinse the turkey with water and pat dry very well. Place the turkey in a roasting pan and rub the chai mixture all over the turkey. Bake for 15 minutes and then reduce your oven temperature to 350°F and continue baking for 2 ½ -3 hours or until a thermometer reads 165. Cover with foil and let it sit for 15 minutes before carving. While the turkey is cooking, prepare your glaze. In a medium saucepan, whisk chai tea latte concentrate and honey over medium high heat. In a small bowl, whisk cornstarch with cold water until there are no lumps. Add to your hot mixture on the stove and continue whisking occasionally until it thickens and coats the back of a spoon. Add the salt, pepper, and butter and remove from heat. Brush the glaze all over the turkey before and after carving it, and serve the remaining glaze on the side.
