Carrot Oatmeal Cookies

Serves: 48 cookies

Ingredients

  • 3/4 cup butter or margarine, melted
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 cup carrots, shredded
  • 1/4 cup water
  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 teaspoon salt

Preparation

Place butter, brown sugar, granulated sugar, and egg in mixer bowl. Attach bowl and flat beater to mixer. Turn to speed 6 and beat for 1 minute. Stop and scrape bowl.

Add carrots and water. Turn to speed 4 and beat for 15 seconds. Stop and scrape bowl. Add oats, flour, baking soda, and salt. Turn to speed 4 and beat for 15 seconds.

Drop by teaspoonfuls on greased baking sheets, 2" apart. Bake at 375°F for 8–10 minutes. Cool on wire racks.
