Carrot Cake Waffles

Serves: 5–8" waffles

Ingredients

  • 3 cup waffle mix
  • 1/8 tsp cardamom
  • 1/2 Tbsp cinnamon
  • 1 cup finely chopped walnuts
  • 1 cup shredded carrot
  • 1/2 cup golden raisins
  • Pinch of nutmeg
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 1 egg
  • 10 oz water

In a mixing bowl, add waffle mix, cardamom, cinnamon, chopped walnuts, shredded carrots, raisins, and nutmeg, and mix thoroughly.

Add honey, vanilla extract, egg, and water to the dry ingredient mix and mix evenly.

Heat the waffle maker. While your waffle machine is heating, make your glaze.

In a stand mixer, cream together the sugar and softened cream cheese.

Add maple syrup and vanilla extract to cream cheese mix, and set aside.

Once waffle machine is heated, take a 4-oz ladle and add mixture to waffle maker. Close lid and let cook for 4–5 minutes until golden brown.

Remove waffle from machine and drizzle maple cream cheese over the warm waffle.

Maple glaze:

  • 1/4 cup sugar
  • 8 oz softened cream cheese
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla
  • 1 8" Belgium waffle maker
