Beer Cheese with Grilled Bread

Ingredients

  • 4 Tbsp butter
  • 1/4 cup flour
  • 1 (12-oz) bottle of beer
  • 6 cups grated sharp yellow cheddar cheese
  • 1 Tbsp Dijon mustard
  • 1-1/2 Tbsp whole grain mustard
  • 1-1/2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/4 plus 1/8 tsp cayenne pepper
  • 1 tsp salt
  • 1/8 tsp ground white pepper
  • 1 baguette, sliced into 1/2" rounds

Preparation

Preheat a grill pan or grill.

In a medium sized saucepan, melt the butter.

Add the flour and whisk until smooth. Cook on medium heat for a few minutes. Add the beer, whisk and bring up to a simmer until it is thickened.

Add the cheese and whisk until all the cheese has melted and it is smooth.

Whisk in the Dijon and whole grain mustard, Worcestershire sauce, garlic powder, cayenne pepper, salt, and ground white pepper. Keep warm on a low flame.

On the preheated grill pan or grill, grill the bread and serve warm with the beer cheese.
