Banana Sushi Rolls

Serves: 3 to 6

Ingredients

  • 3 (8") flour tortillas
  • 3 firm bananas (not overly ripe)
  • 4 Tbsp of chocolate hazelnut spread such as Nutella, room temperature
  • 2 strawberries, stem removed & sliced thin, divided
  • 8 Tbsp peanut butter
  • 3 Tbsp shredded coconut
  • 3 Tbsp of fruity, crispy rice cereal like Fruity Pebbles cereal
  • 3 Tbsp chopped peanuts

Preparation

Place a piece of parchment or wax paper on your countertop and lay out the 3 tortillas. On either a baking sheet or 3 plates, place your coconut, cereal, and chopped nuts.

Using a small offset spatula or butter knife, spread 2 Tbsp of Nutella on one tortilla and place one of the sliced strawberries in a row down the center. Put one banana at the bottom of the tortilla and gently but tightly roll the tortilla around the banana. Spread the remaining 2 Tbsp Nutella on the outside of the tortilla and roll it in the coconut. Top with a sliced strawberry.

Put the peanut butter in a microwave-safe bowl and heat for 25 seconds to soften it. Using a clean small offset or butter knife, spread 2 Tbsp peanut butter on the two remaining tortillas. Put one banana at the bottom of each tortilla and gently but tightly roll the tortilla around the banana. Spread 2 Tbsp peanut butter on the outside of each tortilla. Roll one in the cereal and the other in the chopped nuts.

To ensure nice clean cuts, carefully wipe your knife with a warm towel after each slice while you are slicing the sushi. Cut each banana sushi roll into 1" rounds, grab some chopsticks, and enjoy!

Get creative and use a different cereal or chopped nut topping for your sushi rolls. Have fun!
